Ingredients
- 500g (1 pound) chicken breasts or thighs
- 3 stalks of lemongrass

- 2 tablespoons sugar
- 2 tablespoons vinegar
- 2 stalks of lemongrass
- 2 small chili peppers, finely minced (optional)
- Steamed rice and vegetables, for serving (optional)

Instructions
Step 1 :Mince the lemongrass and garlic. In a small bowl, mix together the minced lemongrass, garlic, and fish sauce.
Step 2 :Cut the chicken into bite-sized pieces and add it to the bowl with the lemongrass mixture. Stir to coat the chicken evenly. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight.
Step 3:When you’re ready to cook, heat the oil in a large pan or wok over medium-high heat.
Step 4:Add the marinated chicken to the pan and cook until it is browned on both sides and fully cooked through. This should take about 8-10 minutes.
Step 5:While the chicken is cooking, make the dipping sauce. In a small saucepan, combine the water, sugar, and vinegar. Bring the mixture to a boil over high heat, then reduce the heat to a simmer.
Step 6:Mince the remaining lemongrass and chili peppers, if using, and add them to the saucepan. Stir to combine.
Step 7:Serve the cooked chicken with the dipping sauce on the side, along with some steamed rice and vegetables, if desired. Enjoy!
Notes
- Be sure to use fresh lemongrass for the best flavor. Look for stalks that are firm and green, with no brown or wilted leaves. To prepare the lemongrass, remove the tough outer leaves and finely chop the tender white part.
- If you can’t find fresh lemongrass, you can also use lemongrass paste or lemongrass powder. Just be sure to follow the package instructions for the correct amount to use.
- Make sure to marinate the chicken for at least an hour, or even overnight for maximum flavor. The longer you marinate the chicken, the more flavorful it will be.
- When grilling or frying the chicken, be sure to cook it until it is fully cooked through. Use a meat thermometer to ensure that the internal temperature of the chicken reaches at least 165°F.
