Description

Ingredients

  • 4 large ripe tomatoes
  • 1 medium onion
  • 2 cloves of garlic
  • 2 tablespoons of olive oil
  • 4 cups of chicken broth
  • 2 tablespoons of tomato paste
  • 1 teaspoon of sugar
  • Salt and pepper to taste

EQUIPMENT

  • A large pot or Dutch oven
  • A cutting board and knife for chopping the onion, garlic, and tomatoes
  • A wooden spoon for stirring the soup
  • An immersion blender or a regular blender for blending the soup
  • Measuring cups and spoons for measuring the ingredients
  • A ladle for serving the soup

Instructions

Step 1: Chop the onion and garlic into small pieces and set aside. Cut the tomatoes in half and remove the core.

Step 2:  the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and garlic and cook until the onion is soft and translucent (about 5 minutes).

Step 3: Add the chopped tomatoes to the pot and cook for another 5 minutes, stirring occasionally.

Step 4: Pour the broth into the pot and add the tomato paste. Stir until the tomato paste is fully dissolved.

Step 5: Bring the soup to a simmer and let it cook for 10-15 minutes, until the tomatoes are soft and starting to break down. Add the sugar and season with salt and pepper to taste.

Step 6: Using an immersion blender or a regular blender, puree the soup until it’s smooth. If using a regular blender, transfer the soup in batches and blend until smooth.
