Ingredients
- 4 large ripe tomatoes
- 1 medium onion
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 4 cups of chicken broth
- 2 tablespoons of tomato paste
- 1 teaspoon of sugar
- Salt and pepper to taste

Instructions
Step 1: Chop the onion and garlic into small pieces and set aside. Cut the tomatoes in half and remove the core.
Step 2: the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and garlic and cook until the onion is soft and translucent (about 5 minutes).
Step 3: Add the chopped tomatoes to the pot and cook for another 5 minutes, stirring occasionally.
Step 4: Pour the broth into the pot and add the tomato paste. Stir until the tomato paste is fully dissolved.
Step 5: Bring the soup to a simmer and let it cook for 10-15 minutes, until the tomatoes are soft and starting to break down. Add the sugar and season with salt and pepper to taste.
Step 6: Using an immersion blender or a regular blender, puree the soup until it’s smooth. If using a regular blender, transfer the soup in batches and blend until smooth.
Step 7: Ladle the soup into bowls and serve with crusty bread or grilled cheese. Enjoy your homemade tomato soup!
Notes
- Use ripe tomatoes: Ripe tomatoes will make for a sweeter and more flavorful soup. If you can’t find ripe tomatoes, add a little extra sugar to help balance the flavors.
- Adjust the consistency: If the soup is too thick, add more broth or water until it reaches the desired consistency. If it’s too thin, let it simmer for a few more minutes until it reduces to the desired thickness.
