  • 1 cup of corn
  • 1/4 cup of red onion, diced
  • 1/2 cup of cilantro, chopped
  • 1/2 cup of cherry tomatoes, halved
  • 1/2 cup of shredded cheddar cheese

For the dressing:

  • 1/4 cup of mayonnaise
  • 1/4 cup of sour cream
  • 1/4 cup of milk
  • 1 tablespoon of lime juice
  • 1 teaspoon of chili powder
  • Salt and pepper, to taste

Instructions

Step 1:  In a large bowl, combine the chopped lettuce, diced avocado, rinsed black beans, corn, diced red onion, chopped cilantro, and halved cherry tomatoes.

Step 2: In a separate bowl, whisk together the mayonnaise, sour cream, milk, lime juice, chili powder, salt, and pepper.

Step 3: Pour the dressing over the salad and toss to evenly coat the ingredients.

Step 4: Sprinkle the shredded cheddar cheese over the top of the salad.
